There is a piece of land that opens up on the banks of the beautifully flowing Maegawa River, a tributary of the Kuma River in the Hitoyoshi Kuma region of Kumamoto Prefecture. Its name is Yunoki Gouchi District. It is Mr. and Mrs. Yamaguchi who carefully grow yuzu in this rich land. I even feel that her gentle and warm personality breathes a shining life into the two yuzu. The yuzu peel is slowly extracted from the aroma and bitterness with icing sugar, and then combined with the juice. Please enjoy the bitter "Zesty" (bittersweetness unique to citrus) and the deep taste of hand-squeezed yuzu juice. Combine it with your favorite amount of carbonation (5 times the amount of cordial) for the finest yuzu squash. Even if you divide it with hot water or add it to tea, it is delicious. For cooking, you can drip a little on vinegar or add it to sushi vinegar to bring out the aroma.
