The highest quality chestnuts from the Hitoyoshi Kuma region of Kumamoto Prefecture, one of the leading chestnut producing areas in Japan, are made with rice shochu brandy aged in cognac barrels at Oishi Sake Brewery in Mizukami Village, Kuma District, to create a fragrant and smooth finish. The chestnuts are peeled by hand one by one to remove the unpleasant taste of the astringent skin, and you can easily enjoy a Mont Blanc-style dessert by accompaniment to cakes and ice cream, as well as bread and crackers.
