AKITADA HAMASAKI
The 5th generation of Kusujoya Shoten, which has been in business for 120 years. After graduating from Tokyo University of Agriculture and working as a photographer https://www.hama-saki.com/, his father, the fourth generation, passed away in 2018. As the fifth generation, he inherited Kusunokiya Shoten. He is struggling to survive as a local soy sauce and miso shop.
Miso making is held 20 times a year at nursery schools, kindergartens, and community centers in Tottori City, and while steadily expanding its fan base, it is also energetically working to develop new products that are sold at select shops outside the prefecture.
His hobbies include skiing, soccer, movies, and art appreciation.

First of all, I feel that I must continue with a sense of gratitude to the local people who have been able to continue in Tottori for 120 years and to the customers who use our products. On top of that, we believe that it is the company's pleasure to be able to make our customers happy through our products and miso making experiences.
It is an old industry that is decreasing year by year, but we want to make it a company where people can find and feel fun and interesting things in it.
We manufacture and sell soy sauce and miso.
We ship mainly to the local Tottori and outside the prefecture.
We frequently give miso making experiences to locals and people who come to Tottori to play, and through the experience, they become familiar with miso and cooking.

The coriander soy sauce with 3 bunches of coriander is additive-free and does not use preservatives.
I had a hard time adding a lot of coriander without using preservatives to give it as much coriander as possible.
The soy sauce is carefully made in an old wooden vat.
Boiled bonito soy sauce is boiled by putting bonito flakes directly into the soy sauce.
