The role of "connecting" the thoughts of farmers and the thoughts of eaters
Until I got involved in farming, I wasn't that interested in the taste of fruits and vegetables.
Or rather, I didn't care.
I thought the fruits were sweet, the vegetables tasted like their own vegetables, and that's it.
However, by becoming a blueberry farmer and being involved in agriculture, I learned that there is actually a big difference in taste depending on the variety, cultivation method, and method of preparation.
What I feel when making dried fruits is that the taste of the fruits and vegetables grown is condensed as it is.
Sweet fruits are sweeter, and fruits with a strong sour taste are more sour.
On the other hand, if the taste is not clear in its raw state, it will not be so characteristic even if it is dried.
Therefore, we use as little chemical fertilizers and pesticides as possible, and we try to make dried fruits and vegetables that stand out as much as possible in the taste of the agricultural products using the ingredients that we have made with time and effort.
I am hesitant to add sugar and additives to make dried fruits because I feel that it will change the taste of the produce.
In addition, we would like to use locally grown agricultural products and agricultural products made by farmers who are not locally grown and have characteristics other than local products, and we would like to produce dried fruits and vegetables and deliver them to many customers.
I believe that we can play the role of "connecting" the thoughts of farmers and the thoughts of eaters with products such as dried fruits and vegetables.
