As a pastry chef, he trained for five years at "Le Pastry Chef Takagi" in Setagaya Ward, Tokyo, and then went to France. He trained with Patisserie SEBASTIEN DEGARDIN, L'ATELIER de Joël Robuchon, Jacques Genin Fondant Chocolat, etc. After returning to Japan, he gained experience at the Ritz-Carlton Tokyo and Park Hyatt Tokyo, and opened "PARIS d'AUTOMNE" in Gunma Prefecture at the age of 29.
