Based on cascara syrup, we blended 8 kinds of spices such as ginger, cardamom, cloves, and black pepper from Kochi Prefecture to make craft cola. The fruitiness and richness of the cascara and the tangy pungency of the spices accentuate it, giving it an adult taste that is not too sweet. In order to make the most of the original flavor of the ingredients, no coloring or flavoring is used. A syrup type that can be mixed with carbonated water and enjoy craft cola. You can also combine it with milk and enjoy it like chai. What is Cascara? Cascara is a dried coffee cherry pulp and skin. Some of the pulp and peel (= cascara) that are produced in large quantities during the refining process are used as compost, but most of them are thrown away because they have no use. As it looks like it is called "coffee cherry", it is a cascara with a fruity aroma like cherries. We thought that we could somehow utilize this to increase the income of farmers who can earn from a single coffee cherry, and we have been making and delivering products that make use of the flavor of cascara, such as "Cascara Coffee Cherry Tea" and "Cascara Syrup". The development of cola is one of our efforts to further expand the possibilities of cascara. In addition, cascaras discarded in the production area can rot and cause water pollution if not treated correctly. We also believe that the use of cascara will help protect the environment of the production area. Compared to the amount of cascara emitted in producing countries, the amount that we can use is small, but I hope that the circulation centered on cascara will expand greatly in the future.
