It is an olive oil made from olives harvested in the rocky region of Campania, which is close to the temperate climate of Puglia in southern Italy. We do not use pesticides such as glyphosate, insecticides, or herbicides, and we use olives from olive trees that are carefully grown by hand. The harvested olives are immediately pressed at a low temperature to make oil. By squeezing at a low temperature, it is possible to maintain the freshness of olives, which tend to deteriorate at high temperatures, and to finish the oil without destroying the original nutrients of the olives.
◎ Acidity: 0.12%
Since it is squeezed immediately after harvest, the "acidity", which indicates the degree of oxidation of olive oil, is 0.12%. If this percentage is less than 0.8%, it can be called "extra virgin olive oil", but it is far below that standard.
Olive oil, which is oxidized, is said to be involved in the oxidation of the body, so please refer to it.
◎ Types of olives
This year's olive oil is a blend of "Leccino" and "Ortiz". All of the olives come from farms managed by the company Sala della Terra.
It is a variety made on a single farm, and the oil is made from olive trees that are well managed on our own farm, so please enjoy that point with confidence.
◎ Taste and aroma
This olive oil feels a bit of a punch as it passes down your throat. This is due to the fact that it contains a lot of polyphenol antioxidants due to the fact that it is an early harvest, as well as a characteristic of the Leccino variety.
◎ How to use
As I wrote earlier, it is "a little punchy", so I think it is preferable to apply "strong for strong things". In addition, it should be used for finishing, not for heating.
For example, arugula, wasabi greens, and other raw vegetables that have a strong punch on their own. Also, dip it in bread with a little browning. It is also an interesting use to relieve the spiciness of chili peppers.

This olive oil is made by an agricultural corporation called "Sala della Terra". It is an organization that means "a gift from the earth" and has the aspect of a social entrepreneur. Specifically, what we are doing is fusing immigrants and citizens from Africa, which has become a social problem in southern Italy. They encourage immigrants who do not know how to live in Italy to play an active role in society, study for qualifications, and pass on agricultural techniques.
That's why they're willing to do things that require a lot of manpower, like herbicide mowing and hand-picking olives. It has become a cycle among them.

◎ Transportation method
This olive oil is transported to Japan under thorough temperature control. It is delivered to Japan by air mail or by sea using low-temperature transportation (reefer container).
