Of the grapes selected, 90% are destemmed and the remaining 10% are fermented whole-bunch.
Fermentation is 100% done with indigenous yeasts and aged in 15% new barrels, 85% old barrels, 300L and 500L French oak barrels for about 10 months.
The grapes are handled as gently as possible, and all the juicing is done by hand. It is lightly filtered and bottled without clarification.

What is Rossidy Winery?
Rosidi is an up-and-coming winery established in 2005 in the village of Nikolaevo in the northeastern Thrace Valley of Bulgaria.
