A deep garnet-colored red wine. A typical Maremma Sangiovese with red fruit and violet scents. Aroma with hints of black currant, raspberry and spices. The rich fruit flavor like strawberry jam blends well with the acidity peculiar to the Sangiovese variety, resulting in a mild finish. Some people may think that it is a little sweet to pair with meals, but it is rather a match for the food culture of Japan, where "sweetness is umami". The tannins are gentle and you won't get tired of drinking.
Morellino di Scansano, the most important denomination in southern Tuscany. At Giore, we have a strong understanding of this tradition and produce this wine exclusively from the Sangiovese variety.
Terroir Features
The 20-year-old vines are planted in dry soil made of skeletal gray clay and grown using the cordon royer method. It can produce about 1.5 kg per plant, and it is usually harvested on the 3rd ~ 10th of September. We do not use chemically synthesized substances, use organic fertilizers and green manure to improve the soil, and prevent pests by treating only copper and sulfur.
brewing
After leeing and malolactic fermentation, the wine is decanted with concrete and sulfur dioxide (1.5 mg/lt) is added. After further decanting, sulfur dioxide is added to ensure that the total SO2 is about 40 mg/lt, and then bottled in the spring after harvest.
