[Unique fermentation technology that makes use of natural yeast]
We use natural yeast from the ingredients themselves, including cacao nibs, and grow only natural yeast while suppressing other bacteria by following the fermentation process such as fermentation temperature and stirring of barrels, where the activity of yeast bacteria is dominant. We are particular about the fact that we use the "natural yeast" that the material originally has (naturalness).
1 ml contains more than 1.0×10 to the 7th power (10 million bacteria) of yeast. The number of yeast fungi per tree is 2 billion bacteria.
