No.9 olive oil is a fresh, ultra-acidic olive oil with a fragrant aroma that is filled with the love of the Cortesi family and Tuscany. It is hand-picked from olive trees, including those over 100 years old, on the hills of the coastal Maremma and inland Bagno a Ripoli, and cold-pressed within hours.

Olive groves can be found around Florence, especially in the terraced fields of Bagno a Ripoli and Impruneta, which stretch over three hectares, and on the coast of Maremma, southern Tuscany. Such a rocky and unique terrain gives the olives a wonderful aroma and character, creating an exquisite olive oil with very little acidity.
Most of the olive trees in the fields are about 30~40 years old, but there are some trees that are over 90~100 years old, giving you a sense of the history of the vineyard. All of these trees are planted in irregular rows in a vast space, so they grow vigorously in a natural environment without the need for measures such as parasites. This wonderful environment is the source of No.9's character, its almost golden green colour, its subtle bitterness and its fruity and slightly spicy aromas. All harvesting is done by hand. After that, it is pressed within a few hours so that the acidity does not become too strong in an optimized production operation.
This olive oil is made by the owner for his family, and only about 20% of the total harvest is shipped to the market.
