There are gorgeous flavors such as apricot and cranberry, and as it cools, it seems to change to a bright orange impression.
It also has a good aftertaste, with gorgeous aromas and sweet caramel flavors that last for a long time.
Serband Ramirez, who runs the El Sedro plantation, is one of the very small producers who has been struggling for a long time.
He grew up here with his father producing coffee and inherited this small farmland.
Currently, while raising his wife and two children, he makes a living by producing coffee on farmland of about 3 hectares.
The village of Posone Negro is located deep in the mountains, one of the most secret coffee producing areas in Honduras.
Until a long time ago, coffee was brought to the local market cheaply by pulping by hand and threshing with wooden manual equipment.
Therefore, it is said that there were years when the management of small farms by family businesses was unstable due to the climate of the year and income was poor.
In recent years, buyers have repeatedly visited Posone Negro Village in search of the microclimate created by its fertile soil and high altitude, and the flavorful coffee produced from it, and the production of specialty coffee and micro lots has been conveyed.
Serband Ramirez has also actively shifted to producing high-quality specialty coffee, and has continued to make efforts to improve quality for his family, such as identifying the time of cherry harvest, optimizing the subsequent process, and installing new drying facilities for greenhouses and African beds.
And in 2017, he exhibited the coffee he produced at a competition. He successfully passed the domestic judging and advanced to the international stage to select the Cup of Excellence. In the international judging, he placed 30th with a score of 85.56. Unfortunately, it did not win the COE award, but it was auctioned as a National Winner lot. With this honor in mind while supporting each other with his family, he says that he would like to grow through friendly competition with his friends living in Posson Negro Village for even greater goals in the future.
