Servando Ramírez, who runs the El Cedro farm, is one of the very small producers who have struggled for a long time. He grew up here with his father, producing coffee, and inherited this small farmland. Currently, while raising his wife and two children, he makes a living by producing coffee on about 3 hectares of farmland. The village of Posso Negro is located deep in the mountains, which can be said to be one of the most unexplored areas of Honduras' coffee production area. Until a long time ago, coffee was pulped by hand and threshed with a wooden manual tool before being brought to the local market at a low price. Therefore, the management of small-scale family farms was unstable due to the climate of the year, and there were years when income was poor. In recent years, buyers have repeatedly visited Posso Negro Village in search of the microclimate created by its fertile soil and high altitude, as well as the flavorful coffee that comes from it, and the production of specialty coffee and micro-lots has been transmitted. Mr. Servando Ramirez has also actively shifted to the production of high-quality specialty coffee, and has continued to strive to improve the quality of his family, such as determining when to harvest cherries, optimizing the process afterwards, and installing new drying facilities for the greenhouse and African beds. In 2017, he exhibited the coffee he produced at a competition. We successfully passed the national judging and advanced to the international stage where the Cup of Excellence is selected. In the international judging, he placed 30th with a score of 85.56. Unfortunately, it did not win the COE award, but it was auctioned as a National Winner lot. With this honor in his heart, which he won while supporting each other with his family, he says that he would like to grow through friendly competition with his friends who live in Posso Negro Village to achieve even bigger goals in the future.
