From grape cultivation to winemaking, Beaujolais Nouveau is a traditional method of production that takes time and effort to create with the family.
It is a delicate and light drink that seems to condense nature as it is.
It goes well with a wide range of dishes, and you can enjoy marriage with chicken dishes, dishes using root vegetables and mushrooms, fresh cheese, terrine, meat dishes in general, okonomiyaki, etc.
Profile of the Chevran family
We have been growing grapes in the southern part of the Beaujolais region for five generations. The owner, Mr. Chevran, is a former professor at an agricultural school. When I drank the wine of a friend who practiced biodynamics, I was impressed by the taste that reflected the local character, so I decided to switch to organic in 2008. He himself practices biodynamic farming and pursues winemaking that takes advantage of the characteristics of the vineyard and grapes.
Vineyards
The narrow road in front of the Chevran family is the "Roman Road" built by the Roman emperor. It is said that the Roman emperor Caesar once passed through it, and it is a district with a long history of grape cultivation. The vineyards in the hills are granite, and the rocky soil is rich in minerals.
In the softly plowed soil, the roots of the grapes extend deep into the bedrock below, and the finish of the wine is a strong reflection of the characteristics of the land.
manufacturing method
The yeast used for fermentation is made by the pied de cube method, which is collected in-house from our own grapes.
About a week before harvest, the grapes that are fully ripe are selected first, the squeezed juice is fermented, and the natural yeast is grown before the harvest. By using this during the fermentation of wine, the yeast of the grapes harvested later also works actively.
In 2015 and 2016, when the grapes were extremely good, SO2 (sulfur dioxide) was not added at all. In 2017, when there was late frost and hail damage, we used a very small amount, but it was so small that it did not appear in the analysis table. After soaking with the maceration semi-carbonic method to produce a light red color, the brew is continued slowly and carefully at a low temperature that does not exceed 25°C.

A new eco-friendly brewery was built in 2017 to try different types of winemaking.
The wine, which is made from grapes grown in granite vineyards, is characterized by a beautiful acidity and a unique minerality, with a hint of spiciness. It is well-balanced, fruity, supple, and has a taste that makes you feel the original strength of the grape.
