Kanazawa Nishiki products are committed to meticulous craftsmanship, making the most of the natural qualities of natural materials. Among them, our flagship and standout products are packed with meticulous attention to detail, from ingredient selection to manufacturing methods and seasoning.
The first thing I want to introduce is the "Marinated Small Horse Mackerel." This authentic Japanese-style marinade (nanbanzuke) features freshly produced mackerel, mainly from Noto, fried crisply in carefully selected NON GMO additive-free fermented bean oil, then slowly marinated in special junmai brewed vinegar and whole soybean soy sauce, along with carefully selected vegetables. The horse mackerel is finished so you can fully enjoy the deliciousness of the horse mackerel.
Also, 'Kaga Jibuni' is an original twist of Kanazawa's local dish, jibuni. Domestic chicken thigh, Kaga lotus root, and domestic bamboo shoots from Kanazawa, domestic carrots, Kyushu donko shiitake mushrooms, and Kanazawa's famous fresh sudare wheat gluten are thickened with potato starch, all cooked together. It features a rich, gentle flavor.
Next, 'Blessings of the Earth Gorōjima Kintoki Poteto' is a simmered dish (sweet stew) made using Gorōjima Kintoki, one of Kanazawa's traditional Kaga sweet potatoes, to bring out the natural flavor of the ingredients. It features the fluffy, traditional texture unique to Gorōjima Kintoki, along with a nostalgic, elegant, and strong sweetness.
Furthermore, the "Noto Kakimeshi no Moto" and "Nihonkai Hotaru Squid Takikomi Gohan Mix" series are also popular. We lavishly use fresh seafood from Noto and the Sea of Japan, and finish without any chemical seasonings. This product is popular among repeat customers for easily enjoying authentic flavors at home.
All products use a manufacturing method that combines traditional techniques with modern hygiene management to maximize the quality of the ingredients. Customers have shared comments such as "I can safely feed my child these flavors" and "I miss the natural flavor," making them highly popular as gifts and souvenirs.
