This product features wasabi miso made with the locally beloved 'Iwaizumi Miso,' combining the sweet and savory miso with the crisp texture of genuine wasabi and the sharp spiciness of wasabi. Without using amino acids, we enhanced the umami with kelp and shiitake mushroom flour.
■ No additives added to the spiciness of wasabi
The sharp spiciness in wasabi processed products is mostly due to the '(wasabi) flavoring' added as an additive.
The spiciness of wasabi is volatile, unstable, and easily lost, and that spiciness is retained and enhanced with additives.
Products that lavishly use genuine wasabi rhizomes or new shoots from flower wasabi or wasabi stems tend to produce a strong spiciness, but honestly, it's quite difficult to achieve year-round.
For this product (Iwaizumi Wasabi Miso - Additive-Free Ver.), we were able to produce additive-free wasabi miso at a relatively low cost by using the 'wasabi farm powdered wasabi' produced at our farm.
■ For commercial use (including additive-free products), we are adopted by bakeries, izakayas, rice ball shops, and deli stores.
The moisture contained in miso hydrolyzes the powder, producing spiciness, and we achieved the spiciness of wasabi without additives.
With the reduced moisture content, the product has become more stable and easier to use.
