Black honey is a method of finishing with pulped natural, which is dried without removing mucilage (mucilaginous substance attached to the thin shell (= parchment) that covers the seeds).
It is said that in the production area, the sugar contained in the mucilage is transferred to the seeds, which increases the unique sweetness.
The powerful and unique flavor is a rare micro lot that cannot be easily tasted anywhere else.

About 80 years ago, brothers Elandio Gutierrez and Edgar Gutierrez inherited their father's will and began making coffee by cultivating a farm in Dota in the Talas district.
Edgar's eldest son, Lewis, spent 24 years at the Copedota mill, one of the finest mills of the time, where he worked in the selection and sorting of cherries for 24 years, and then worked in another mill for 18 years.
Later, in 1999, his brothers built their own finery factory, which they named Montañas del Diamante (Mountain of Diamonds).
Lewis passed away in 2010, but his passion and skills continue to this day.
