Peralta Coffee is Nicaragua's leading specialty coffee producer and exporter, run by the Peralta family.
They own seven plantations and a dry mill around the city of Mosonte, near the border of Honduras, and the area is known as Dipilto and San Fernando, which are famous for their coffee.
Each farm cultivates a variety of varieties, and we always try to use a careful selection method that takes advantage of the characteristics of the variety.
This time it is a single lot of Erbosk plantation, which grows Java seeds in it.
It has a bright and light citrus flavor with a slightly sweet and sour apricot-like aftertaste.
After medium roasting, the bitterness is well balanced, making it perfect for a cup every morning.
Due to its delicate taste, it is recommended to use a light roast to a medium roast before 2 gobies.
All of Peralta's coffees are hand-sorted using a saccharimeter to ensure the perfect ripeness of the cherries before post-harvest processing.
For post-harvest quality control, we conduct monitoring inspections as appropriate to not only eliminate blurring within the same lot, but also minimize blurring from lot to lot.
Thanks to this monitoring inspection, we are able to see 100% of how and when each lot was processed.
It is a regular farm that has won COE prizes many times, but when you hear that they are practicing this thorough quality control and lot management, it is understandable that they continue to win awards.
We will take your order and roast it, so you can always have fresh beans at your fingertips.
