Watato is one of the few heirloom makers in Tokyo that preserves the craftsmanship of the "Five Family Treasures", which are known as the three major confectionery in Saitama. In order to master the traditional taste, we select soybeans from Hokkaido, Saitama, and Canada, and together with Akiba Shoten, a "roasting factory specializing in soybean flour" that is valuable in Japan, we use a roasting method that matches the season and humidity to make fragrant soybean flour. In addition, according to the temperature and humidity that change slightly with the seasons, the craftsmen carefully determine the secret molasses blend and boiling time to create a gentle sweetness and elegant flavor in the mouth.
Based on these traditional techniques, the "KINAKO Sweets Factory" brand was born. For example, "Tokyo Kinacologne" is an innovative series that uses a wide range of flavors such as caramel and chocolate to harmonize Japanese and Western tastes. In addition, "Gokabo and Kuromitsu," which wraps chocolate in an exquisite balance, is also gaining support as a modern soybean flour confectionery that caters to a variety of tastes, from the young generation to the elderly.
All of these sweets are carefully handmade one by one at a factory in Adachi Ward, Tokyo, under the supervision of the fourth-generation Five Heirloom craftsman, Masayuki Watanabe. While it is a craftsmanship that has been handed down for a long time, we continue to create new values that are close to the current era.
