Genkaizuke Co., Ltd., founded in Karatsu, Saga Prefecture in the mid-Meiji period, has continued to protect the one-of-a-kind delicacy called "Genkaizuke" for more than a century.
Genkaizuke is a lees pickle made by finely shaving and refining the cartilage of the whale's upper jaw (turnip bone), and then slowly soaking it in aged sake lees with a secret seasoning. The unique crunchy texture and the mellow aroma of sake lees are in perfect harmony, making it a traditional food that Karatsu is proud of.
Since our founding, we have consistently been particular about sake lees, and have been striving to create products that will be appreciated as an accompaniment to our customers' tables or as a local specialty through lees pickling.
Although the times have changed, while valuing the traditional taste that has been passed down from generation to generation, we have also developed products that meet the trends and continue to protect Genkaizuke, which is widely popular as a sole food in Saga Prefecture.
Our mission is to preserve the tradition of Genkaizuke, which is the pride of Karatsu, while passing on its value to the next generation. And to continue to be a company that can continue to be remembered by the people of the community.
The lees pickles, which are carefully made one by one, are filled with the climate and history of Karatsu, as well as the thoughts of the craftsmen.
