With a menu based on organic vegetables and millets produced in the prefecture and sticking to macrobiotic cooking methods, we are still welcoming guests from Japan and abroad.

In 2011, out of a sense of frustration that Okinawa, which had been an island of longevity, had become a short-lived island in the past 20 years, and a sense of crisis about the low food self-sufficiency rate, in which most of the vegetables and grains were bought from outside the prefecture despite being called island vegetables, we started an initiative to revitalize Okinawa and the world from the roots through a small shop.
In order not to lose the five grains, which are the traditional ritual crops of Okinawa, we make products that make the five grains delicious, such as five-grain vegan frozen foods that create the taste of meat, fish, eggs, and dairy products with five grains, a five-grain mix that can be cooked simply by putting it in rice, and okara miso bed of island tofu made from organic brown rice bran from Okinawa Prefecture, as well as vegetable taco rice, retort packs, and guilt-free hemp charcoal cola.

"Shima Tofu Okara Miso Floor"
Okinawa ranks first in tofu consumption in Japan. We didn't want to throw away any more okara that would otherwise be discarded as industrial waste, so we created an upcycled product called "Shima Tofu Okara Miso Floor" that uses 60% of okara.
The reason why we named it "MISODOKO" is that you can make miso pickled vegetables like a bran bed. After enjoying miso pickling about 10 times, it is an excellent thing that you can eat it all. The more you soak it, the more the minerals in the vegetables accumulate in the miso bed, but this is irresistibly delicious, and when used as a seasoning, dressing, or toss for stir-frying, it creates a rich taste that makes you feel like you have improved your cooking skills.
