[Soy Sauce Miso]
Made with 100% soybeans and wheat from Ama Town, this traditional miso is carefully handmade over about three months using traditional methods. It has a flavor somewhere between soy sauce and miso, with the fermented mash flavor standing out.
Because it is not heated or treated with alcohol, the koji mold remains alive, allowing it to mature day by day. Of course, it is great for dipping hot rice, grilled rice balls, or cucumbers, but also recommended for seasoning vegetable stir-fries or grilled fish.

[Flying Fish Dashi]

Each fresh taska shell, carefully landed in Oki, is processed on the freshest day. We use rare parts of the sazae, which make up only 10% of the harvest.
