*If you use our Kefirko kefir maker, you can ferment comfortably.

・Avoid using coconut sugar, maple sugar, or honey in this product, as this may inhibit the growth of bacteria in water kefir.
・Please avoid metal containers, lids, spoons, etc. used for fermentation.
・There is no problem if you use well-cleaned containers, but if possible, please manage hygiene by disinfecting with boiling water or alcohol (white liquor recommended).
★ Preparation time about 5 minutes
★ Fermentation time 24~48 hours
(1) Stir in a container with 2 tablespoons of sugar and 1 liter of water to dissolve.
(2) Add 1 bag of water kefir starter and mix gently until completely dissolved in water.
(3) Add 2 lightly washed dried figs.
(4) Cover the mouth of the container with kitchen paper and secure it with a rubber band.
Ferment at room temperature for 24 to 48 hours.
(5) After 24~48 hours, the water kefir will be ready. It can be consumed immediately or stored in the refrigerator with a lid on for up to 2 weeks.
(6) Save 200ml of finished fermentation water for use in the next fermentation.
Add the stored 200ml to 1, stir well and repeat the same process.
Sediment can form at the bottom of the container during fermentation, but the sediment contains many excellent microorganisms, so please mix the sediment with the 200ml used for new fermentation. You can make a total of more than 10L of water kefir in one bag.
*We recommend using water kefir that has been stored in the refrigerator for no more than 2 days.

After the fermentation is completed over 24~48 hours, the finished fermented water can be mixed with juice, etc., but you can also mix the fermented water with your favorite dried fruit or fruit juice into a container, seal it, and let it ferment for a second time for 24~48 hours.
During fermentation, kefir bacteria produce a frothy drink.
The tighter the jar, the more carbonic acid is produced during fermentation.
When the water kefir is ready, carefully open the jar, as it may bubble and leave the jar due to increased pressure.
Store the finished fermented water in the refrigerator and consume it as soon as possible.
