In Mexico, where organic coffee cultivation is thriving, Chiapas, which is the most active in coffee cultivation, is blessed with abundant nature and is a land that Mexicans want to visit. The coffee beans produced by the Sierra Madre Environmental Farmers' Association (CESMACH) are located in the buffer zone of the El Triunfo Bioreserve*, at altitudes ranging from 1000 to 1750 meters. Coffee is grown on small-scale coffee plantations of an average of 4 hectares per farmer, and the cultivation of non-coffee crops is restricted in the district for environmental conservation and bioconservation. At Sesmatch, we cup, evaluate, and provide guidance on samples from all farms, providing appropriate guidance to improve the quality of each farmer. In addition, since 2010, through the grassroots technical cooperation of the Japan International Cooperation Agency (JICA), quality improvement, sales activities have been strengthened, and technical support has been provided with the cooperation of the Keio University Fair Trade Project Japan Japan.
As for the degree of roasting, it will be "medium-deep roast (about full city roast)".
