*2 Wilting: Water evaporates from the tea leaves and wilts. This leads to oxidative fermentation and gives off a flower-like aroma.
■About the producer:
< Makinohara Yamamoto Garden (samurai-teafarm>
Makinoharayama Honen is now a place that is looked down upon not only by Japanese tea lovers but also by tea lovers.
The Yamamoto family is a venerable family that served as the royal physician of the Tokugawa family during the Edo period, and was a member of the elite corps escorting the 15th shogun, Tokugawa Yoshiki, at the end of the Edo period. At the beginning of the Meiji era after the fall of the Edo shogunate, the Yamamoto family settled as a pioneer group on the Makinohara Plateau. Among the pioneers, only Makinoharayama Honen continues to make tea from the descendants of the shogunate.
The current fifth-generation owner, Mr. Mori Hiko Yamamoto, has continued to take on the challenge of developing teas with a particular focus on aroma, such as Japanese black tea, aromatic green tea, and Minami Sayaka. In particular, in 2004, when the name "Japanese black tea" was not yet common, he began cultivating the black tea variety Benifuki. Since establishing the manufacturing method, it has made great strides year by year, winning numerous awards. Fragrant Japanese black tea that is not bound by existing frameworks is a gem that can only be created by Mr. Yamamoto, who inherited the pioneering spirit of the shogunate clan.
Winner of "100 Selections of Fujinokuni Mountain Tea", "Japanese Tea AWARD", "Domestic Black Tea Grand Prix", and "Japanese Black Tea Festival".
<About the Makinohara Plateau in Shizuoka Prefecture>
Facing Mt. Fuji, Suruga Bay, and the Oigawa River in the central and western part of Shizuoka Prefecture, the Makinohara Plateau is blessed with a warm climate and well-drained soil suitable for tea cultivation.
In the early Meiji period, when the Edo shogunate fell and the times changed drastically, unemployed samurai, Kawagoe people, and local farmers pioneered this land, which had been a wilderness until then. Now, more than 150 years later, a vast tea plantation known as Japan's largest tea-producing area has spread, and a new era of tea has been opened, such as the tea manufacturing method "deep-steamed tea" and the World Agricultural Heritage "Tea Grass Farming Method".
