In order to maximize the flavor, it is not pressed immediately after crushing, but is brewed for a long time in the image of orange wine before being juiced. It is barreled with as low pressure as possible and a short squeeze to avoid oxidation as much as possible, and aged in surreal as it is, believing in the antioxidant effect derived from apples. When lactic acid fermentation is completed and the lees have been lowered, apple juice is added and bottled. No SO2 additives. The consignment brewer is Fattoria al Fiore in Miyagi Prefecture. For Lingoli Rappa, which is aiming to brew its own wine from next year, we have commissioned barrel-fermented cider to brew as a manufacturing method that we would like to raise as a top cuvée in the future.
