YUMI OSUGA
Owner of the spicy restaurant "Red Pot". He has been researching spicy dishes for about 20 years. While running a restaurant in Omotesando, Tokyo, which is called the "sacred place of extreme spiciness", he continues to explore the charm and potential of chili peppers. Spiciness is not just a stimulus, but a balance with flavor and aroma is the only way to complete a dish. Just being spicy doesn't make the food delicious. In the red pot, we have pursued the perfect balance of "spicy and delicious" and have faced cooking and seasoning making. By utilizing chili peppers as a spice that enhances the flavor of the ingredients, we propose a new world of spiciness that can be enjoyed on the daily dining table.
