Our noodle making begins with a special "terroir" called Tokushima Handa. The dry wind blowing down from the Shikoku Mountains, the clear water of the Yoshino River, and this natural environment have nurtured the quality of Handa somen.
Respect for traditional hand-stretching techniques
While carefully adhering to the 300-year-old manufacturing method, we have evolved it to meet modern safety standards. We emphasize the technique of "waiting" rather than "prolonging", and value the sensitivity of the craftsman to read the temperature and humidity while feeling the breath of the fabric.
Thorough commitment to raw materials
Because it is a simple ingredient of flour, salt, and water, it is impossible to cheat. In particular, organic products are made from organic wheat grown in Hokkaido's sustainable and environmentally friendly agriculture. Grown without the use of chemical pesticides and fertilizers, the precious wheat has a gentle aroma and natural sweetness.
Environmental Considerations and Sustainability
By sticking to domestic raw materials, we reduce food mileage and support local agriculture. In addition, as an organic JAS certified factory, we strive to manufacture with a low environmental impact and continue to work to preserve beautiful nature for the next generation.
We are not just about making noodles, but as inheritors of food culture in harmony with nature, we deliver our products responsibly.
