The seawater in Noto is very transparent, very pure and beautiful. However, "marine plastic waste" is now a problem in the world's oceans, and the sea in Noto is no stranger.
Therefore, as an obligation of those who make salt, we use equipment equipped with very fine filters and use seawater that has been stripped of all solids, including microplastics, for salt making.

There is a saying.
There is a beautiful sea because of the beautiful forest. We use only thinned wood cut from the satoyama of Noto as the fuel we use for our kama cooking. I would like to do something that will help maintain the mountains as much as possible.
In addition, the use of thinned wood contributes to a "carbon neutral" initiative that does not increase the concentration of carbon dioxide on the earth. While being grateful for the blessings of nature, I would like to continue to make delicious salt.
