First, in product manufacturing, we use organic rice koji made from pure water from Minamiaiki Village, Nagano Prefecture, and brewery-attached koji mold harvested in-house at a miso brewery in Fukui Prefecture. By using cultures grown in natural environments rather than cultured ones intended for mass production, we achieve a mild, mild, and gentle taste with no strong odors. From selecting raw materials to the manufacturing process, we value the blessings of nature and the temperature of handwork, focusing on maximizing the power of the ingredients without unnecessary additives.
