After retiring in Tokyo, he moved to Nirasaki City, Yamanashi Prefecture, and is a passionate man who devotes his second life to viticulture and winemaking. In 2016, he started cultivating on a 3,800-square-meter garden after his farming experience at Dr. Satoshi Omura's birthplace, and established "Creation farm" in 2020. Based on his solid skills from the University of Yamanashi with a Bachelor of Wine Science, he practices "participatory farming" that works hard with the local people. With his unique perspective of sublimating discarded immature fruits into "Verges" and his high brewing techniques that have won his first entry and award at the Japan Wine Competition, he continues to take on innovative challenges while respecting tradition.

We adhere to the "estate" style, in which we complete everything from grape cultivation to vinification in-house in one of the most famous brewing regions in Nirasaki City, Yamanashi Prefecture. Our commitment to giving shape to the brand's worldview lies in our thorough on-site principle. We practice "participatory agriculture" in which we deliberately open up processes that require a huge amount of manual work, from bud weeding, picking, and hatting to harvesting, and work together with local residents and those who wish to experience it. In terms of winemaking, we combine the latest knowledge with traditional methods. In particular, unripe grapes produced by "thinning (harvesting)" to improve the quality of wine. This is our symbolic initiative to turn all ingredients into value.
