In 2017, he started cooking classes for foreigners in Kamakura, and in 2022, he won the "Next Break Award" in the "Eat Meet Japan" contest sponsored by the Ministry of Agriculture, Fisheries and Forestry for his "Whole Soybean Sustainable Cooking". In a class where soy milk is squeezed from dried soybeans and cookies are made using the okara left over after squeezing, he was shocked to find that a large amount of okara can be produced, and he thought, "It would be a shame to throw this away!", so he purchased okara from a local tofu shop in Kamakura, and after trial and error, he completed and commercialized "soï soï". Our goal is to have these nutritious cookies eaten nationwide and around the world as a snack that is friendly to both people and the earth.
