"Olive jam" developed by the Noviembre brand of extra virgin olive oil.
The olives themselves were made into jam. Crushed olives and olive oil are loosely hardened with agar (a naturally occurring coagulant made from seaweed) and finished with only sugar and citric acid. There are two types. Green olive jam is made with early-harvested green olives, so it has a refreshing acidity. You can add it to bread as it is, or add lemon juice to make a delicious dressing with leaf salad. Black olive jam is made from ripe olives. It has a slightly sweeter taste than greens, but it is delicious not only for dipping it on bread, but also for cheese and dipping meat dishes.
Mr./Ms. Deutch, which is made with prosciutto, cheese, chicken, and leafy greens, is also a delicious accent.
