Sustainable farming that takes into account the natural environment has created this unique
It preserves the delicate flavor and aroma of the variety.
Harvesting and vinification: The harvest begins around mid-October each year, when the grapes have reached the right level of acidity and fruit maturity, and are harvested by hand and bottled in the spring of the following year. This Fujisan Winery Koshu is based on the 22-year-old Koshu variety and blended with 20% of the total Koshu variety that has been laid down in the 21-year harvest barrel aging. The wine avoids the oxidation of the mast and aging at the immature stage by minimizing the opportunity to come into contact with oxygen during the vinification process, and retains its infinitely fresh taste with the screw cap.
