Ripe grapes that have been carefully sorted and hand-picked are placed in divider boxes every 10 kg and a series of operations are started while strictly controlling the temperature. It is rested in a refrigerated constant temperature warehouse at 10°C, and the fruit is sorted two more times before and after destemming and squeezed to the best grain. Immersion in oak barrels for about 10 days, low temperature immersion at 8~10°C, alcoholic fermentation in oak barrels for 15 days at about 27°C, and postmaceration in oak barrels for about 15 days.
After that, it is aged in 225L oak barrels for 18 months. After blending and bottling, the bottle is aged for at least 12 months.

Trilinsky, who loves nature and people, saw grapes as a manifestation of the soil, sunlight, breezes, and mental images, and decided to devote his heart and soul to turning the best parts of the grapes into wine.
The god of wine, Dionysus (Bacchus), originated from the god of wine, who was worshipped in Thrace. In No Man's Land, now Svilengrad, ancient Thracians made wine thousands of years ago.
It was not a coincidence that winemaking began in No Man's Land, but because the climate was perfect for grapes. It has a temperate climate, the temperature does not drop too much in winter, and the annual solar radiation is the largest in Bulgaria.
As a border zone between Bulgaria and Greece/Turkey, the site is untouched by nature, and nearby Mezec is home to the ancient Thracian kings, famous for their winemaking, which tells us that it is the wine region of choice.
The backbone of the winery is the twin brothers Kisiov, young brewers Svilen and Ivan.
Their dream is to carry on the ancient winemaking tradition of No Man's Land and to once again make this exceptional history of Thracian wines known to the world.
