In order to bring out the flavor of organic apples to the fullest, they are not squeezed immediately after crushing, but are brewed for one month before juicing. After about a month of barrel fermentation, when the aroma of the barrel has shifted firmly, about 4% of the juice of mountain grapes is added and bottled. Cider that has gone through brewing fermentation and barrel fermentation is fermented for a second time in the bottle by adding the juice of local mountain grapes as a little essence. I named it "Echo of the Mountain" because of the image that the astringency and acidity of mountain grapes blend into the apple juice and reverberate. The foam is a slightly weaker pressure of 1.5 atmospheres.
