It uses whole wheat flour ground from Hokkaido Tokachi whole wheat in a stone mill, whole wheat flour from rare ancient wheat grown in Japan, and wheat grown in the three Tokai prefectures.
The sugar is not chemically refined, raw sugar from Kagoshima Prefecture, beet sugar from Hokkaido, and brown sugar from Okinawa Prefecture are used differently depending on the sweets.
The only oil used is rice oil made from pressed domestic rice bran and rapeseed oil, which is pressed the best. No shortening is used in the dough or frying oil. Eggs are fertilized eggs of free-range chickens in Gifu Prefecture only in the land of Karinto.
