Features of "Quick-brewed Fish Sauce"
While general fish sauce has a very high salt content (20~30%) and a high histamine level (100~400ppm), "quick-brewed fish sauce" can be made without salt, and the histamine level is around 10ppm.
*This "mackerel fish sauce" has 0% alcohol and no preservatives added, so the salt content has been adjusted to 15%.
While the fermentation period of general fish sauce takes six months to one year, it is produced in a short period of time of 1 to 3 days.
(In joint research with Fukui Prefectural University, the fermentation rate of fish sauce has been increased by 30 times.)
By carefully removing the oil that is unique to handmade, there is no peculiar smell of fish sauce, making it easy for anyone to taste.
Features of "mackerel fish sauce"
Fish sauce contains a lot of amino acids from animal proteins.
(Especially rich in essential amino acids necessary for the human body, lysine and arginine, etc.)
Among fish sauces, blue mackerel is rich in useful amino acids and is rich in DHA, blood pressure-lowering peptides, and taurine.
The fact that these peptides and taurine lower blood pressure has also been confirmed in animal experiments at Fukui Prefectural University.

The brewing water is made from groundwater (rich in minerals) from Mt. Hakusan pumped from 30 meters underground.
