When it comes to bacon, it is common to make it with pork belly, but "Wagyu bacon" is Yamanothankaya's original marbled Wagyu beef "high-grade bacon" made from Tottori Wagyu beef belly.
The melt-in-your-mouth marbled meat is melt-in-your-mouth and light. You can fully enjoy the sweet aroma, the flavor of the meat, and the satisfaction of eating.
The part used is "triangular rose". Even among roses, the texture is very soft and the marbling is beautiful, so it is a high-class part that is served at yakiniku restaurants such as "special short ribs". We were particular about delivering the "triangular rose" as "bacon on the block".
In the development and production of Wagyu bacon, we are working Masanori Koike, president of Takarazuka Ham Kobo in Hyogo Prefecture.
As a method of salting for making smoked, Yamanothankaya uses the "dry salt method" in which salt is rubbed directly without using liquid. All the bacon blocks cut by our butchers are salted by hand by President Koike himself. The salt concentration and salting time have been repeated through trial and error, and the salt is exquisitely salted to bring out the flavor of the meat while being salty.
Cherry blossoms are used for smoked chips. The harmony of the sweet scent of Wagyu beef coconut milk and the elegant scent of sakura that does not interfere with it is exuded.
