Modest and gentle coffee delivered from the highlands of Doi Tung "Withdrawn honor student"
The "Doi Tung Development Project" led by the Thai royal family is an initiative to support the people of Doi Tung district who had to resort to drug cultivation and promote the conversion of crops to coffee cultivation. This region is known as the Golden Triangle region, located in Thailand's Chiang Rai province and bordering Myanmar. Here, we have been plagued by social problems such as drugs, poverty, and AIDS for many years, but we are trying to achieve sustainable living through coffee cultivation.
Doi Tung district is located at an altitude of 900~1,350m, with Tipica and Catimol coffee grown in an ideal growing environment. In order to support this project, in 2014, coffee hunter Yoshiaki Kawashima provided guidance as a "coffee advisor" and contributed to improving quality.
When I first test roasted these coffee beans, I got the impression that they were similar to those from Honduras. It is mellow and easy to drink, and when blended with other beans, it does not break its harmony, and it is characterized by a subdued and gentle taste. The light roast has a straightforward sourness and a mild bitterness in the dark roast, making it a truly "withdrawn honor student".
