Shizen Sparkling is made using 100% locally grown Koshu grapes and is aged in the bottle for at least 2 years using the traditional method.
This wine, which is a sure match for Japanese food, is not blended with any other varieties and brings out the pure fruit flavors of the Koshu variety by avoiding surreal aging in barrels and excessive malolactic fermentation.
The late Professor Denis Dubourdieu, Dean of the Faculty of Oenology at the University of Bordeaux and a renowned authority on white wine, has spent years visiting Japan frequently to investigate the scientific characteristics and taste of the Koshu variety.
Professor Dubredieu cited two successful examples, Portugal's Vigno Verde with a low sugar content and Champagne Chardonnay with high acidity, and proposed to make sparkling wines with high acidity and low alcohol content from the Koshu variety using the traditional method.
All vineyards are directly managed by the winery to ensure that they are grown using sustainable farming methods, and the yield of vineyards grown using the Pergola method, which is common for table grapes, is limited as much as possible, and some grapes from vineyards grown using the VSP method traditional in France are added.
The VSP method reduces production, but it enables photosynthesis from both directions of the leaves, and the increased amount of sunlight results in a highly concentrated fruit flavor.
All vineyards are located at an altitude of more than 500 meters, one of the highest altitudes in Japan, and the nights are cool and the temperature difference between day and night is large, so you can get the ideal acidity that is essential for great wines.
