■ A taste that can only be made with Salemi Pina
Salemi Pina is originally a farmer.
Cherry tomatoes grown in the open field are fully ripened on the tree, kept fresh, and heated in a large pot in a workshop next to the farm. The olive oil used is also harvested and squeezed on our own farm.
The cooking pot for sale has become larger, but the recipe was devised by Mamma of the Salemi family. The ingredients and cooking methods are simple, but everything is exquisite.
■ Do not cook as much as possible
Ripe cherry tomatoes are surprisingly full of flavor. The acidity, sweetness, umami, and aroma are all more than enough.
That's why we recommend pasta and super simple tomato sauce! The rest is to your liking, and it is enough to sprinkle a little Parmigiano at the end.
Alternatively, you can chill it, add finely cut cucumbers and celery, and enjoy it as a gazpacho-style soup.
■ Only precious cherry tomatoes
On a small hill in the mountains of Sicily. Cherry tomatoes (Chiriesino), which are the raw material for sauces, are grown at the Salemi Pina farm, which has good drainage and a pleasant breeze.
The sauce is made using ripe cherry tomatoes that have been blessed by the sun and are only made in the summer, when the tomatoes can be harvested. Therefore, the tomato sauce of Salemi Pina is fragrant and tasteful.
