Ibusuki City is located in the southern part of the Satsuma Peninsula. In 2008, Professor Kazunori Takamine and his colleagues at Kagoshima University's Faculty of Agriculture isolated yeast from the soil of Hayato Matsubara, the site of the Imaizumi Shimazu family temporary residence in the same area, and named it "Atsuhime yeast." "Atsuhime yeast" has been used as a yeast for shochu in Kagoshima Prefecture so far, but this time, with the support of Professor Takamine, we took on the challenge of making craft beer with "Atsuhime yeast". The secondary ingredient to be combined is "stem tea" from "Ishimine Seicha", which runs a tea business in the mountains of Mt. Kiyomi, near Lake Ikeda, which is adjacent to Izumi Ima. It is a special cup brewed by history and nature, combining the bitterness of stem tea nurtured by the blessings of nature of Mt. Kiyomi, the strong hop aroma of Imperial IPA, and the sharp taste. Hifumiyo Brewing plans to continue to produce craft beer from Kagoshima Prefecture using "Atsuhime yeast" as part of the "ATSUHIME CRAFT" series.
