Shizen wine is a domestic wine made to bring out the beautiful, delicate, and unique taste and aroma of Japanese food.
"Japanese food" has been registered as a UNESCO Intangible Cultural Heritage, and the popularity of Japanese food overseas is increasing. Even when the Shizen wine project started in 2003, it was said that 600 million Japanese foods were eaten worldwide every year. Against the backdrop of this Japanese food boom, 100% Koshu Japanese wine was born.

Vineyards: We have 5 vineyards in Yamanashi and Shizuoka, and grow Koshu varieties. Sustainable in consideration of the natural environment
Farming preserves the delicate flavors and aromas of this unique variety native to Japan.
Harvesting and vinification: The harvest begins around mid-October each year, when the grapes have reached moderate ripeness in acidity and fruit
After harvesting by hand, only the first squeezed juice is fermented in a stainless steel tank, and then it is surreal for at least 6 months.
After aging, it is bottled in the spring of the following year. The wine avoids the oxidation of the mast and aging at the immature stage by minimizing the opportunity to come into contact with oxygen during the vinification process, and retains its infinitely fresh taste with the screw cap.
Comments and Dishes: 2024 has been a difficult year with a lot of rain during the flowering season. Many of the grapes were uneven, so the selection was stricter than usual. Since the yield has dropped significantly compared to last year, the resulting production has decreased, but it is full of concentration and we were able to finish a high-quality wine.
It has oriental lime and white peach aromas with a slightly rich passion fruit flavor. The texture is complex, with a lively, fruity, and soft taste. The vivid taste with pure fruit flavors goes perfectly with Japanese cuisine with the delicate flavors of white fish, fresh fish and shellfish, seasonal vegetables, and tempura, as well as simple flavors such as soba noodles and grilled fish.
Lightly chilled before serving and decanting is recommended.
