"Coffee made by Mr./Ms. Takahashi and Peruvian friends"
Mr./Ms. Katsuhiko Takahashi from Kanagawa Prefecture was completely outside the world of coffee.
After marrying a Peruvian woman, he moved on to coffee farming, which was the family business of his wife's family.
Mr./Ms. Takahashi and his family grow coffee in the village of Achamal, Peru.
In August 2023, Sugiyama, the representative of Yume no Tsutsuki, also visited the area to see the process from coffee harvesting to refining with Mr./Ms. Takahashi and his family.
【Message from Mr./Ms. Katsuhiko Takahashi】
The production area is located in the Huyaba Valley, a 30-hour bus ride from Lima, across the Andes Mountains, facing the Jagur in the Amazon. Blessed with a natural environment, fertile soil remains, it is a famous region where high-quality coffee is produced. It is also a coffee-producing area that European countries (mainly Germany) are paying particular attention to.
Among them, Achamar Village grows coffee using the traditional method.
Most of them are small-scale producers of about 1~2 hectares who make a living by growing coffee.
The average yield per household is 400 kg ~ 500 kg.
The climate is tropical with dry and rainy seasons, but due to the plateau, the average temperature is about 21°C, which is a very comfortable environment. This area is home to a large number of wild plants and birds Mr./Ms., and is world-famous for its orchid flowers ("orchidea" in Spanish).
Our aim is to produce coffee of better quality that satisfies our customers.
We aim to improve the quality of coffee, so that we, the producers, can maintain the natural environment and allow children to continue to live with dreams and smiles. We want to make coffee that grows together with you.
At our shop, which specializes in organic green coffee beans, we have prepared coffee beans at a roasting degree that allows you to feel the deliciousness of Peruvian café Orchidea to the maximum.
The degree of roasting is "medium-deep roast (about full city roast)".
[Cup Comment]
It is roasted with the roasted nut-like aroma and flowery aroma of Café Orchidea.
The acidity is modest, the sweetness and bitterness of chocolate are filled, and it has a refreshing aftertaste while also having a sense of body.
"Founded in Taisho 7, the roasting made by Matsuya Coffee Shop is the decisive factor in the taste!"
The point is steamed roasting. Then, by a certain action (trade secret) immediately after baking, the roasted beans are rapidly cooled.
As a result, the roasted beans are plump and retain their high aroma when they are sent to the customer.
The long-established roasting technology with a sense of stability is finished in beautiful coffee beans.
