■About taste
The characteristics of each Asian coffee bean are mixed, and it is rich yet mild and satisfying. The sweetness follows the bittersweet taste typical of coffee, making it a truly bitter and mild coffee. It has a savory aroma like cacao and chocolate and a somewhat nostalgic karume-yaki-like aroma.
■Country of origin of coffee beans
・Philippines (around Baguio, Benguet Province, Cordiliera region)・・・Mild feeling
・Myanmar (Yuan Gan, Shan Province) ・・・ Sweetness
・Timor-Leste (Retefojo Renumata Village, Elmera Province)・・・Body and fragrance
・Thailand (Chiang Mai Kunte): Sweetness and sourness
■Three features
1. Comply with fair trade
The main bean in the blend, SISAM COFFEE, is a fair trade coffee from the Philippines that adheres to fair trade standards. For other beans, we are also providing support to producers to continue growing coffee with peace of mind in a way that is as close to fair trade as possible.
2. Eco-friendly and body-friendly
At each country's farms, we are working on sustainable cultivation methods with low environmental impact, such as agroforestry (forest farming) and no use of chemical fertilizers. Not only does it protect the ecosystem of the forest, but it also helps consumers eat with peace of mind, and it also protects the health of the producers who work on coffee farms every day.
3. Sticking to "neighborhood"
The coffee beans are produced in the Cordiliera region of the Philippines, which is familiar from SISAM COFFEE, as well as Asian countries such as Myanmar, Thailand, and Timor-Leste. In addition, roasting and blending are handled by the same coffee division as Sisam Kobo, which has a roastery in Kyoto, and the coffee division of the "neighborhood (=neighbor)", taking advantage of the connection of "neighbors" (=neighbor).
Furthermore, the goodness of the neighborhood is reflected in the food mileage aspect, such as reducing energy and costs used by the shorter transportation distance compared to general coffee.
