NANAIRO was born through a process of trial and error with samples in mindful of products that emphasize fragrance.
The sweet potato used as an ingredient is the sweet potato variety "Konaisin". It is difficult to handle as a raw material for shochu, such as the fibrous material that is so hard that the machine breaks, and it takes three times as much time to prepare, and it has never been used by most breweries. However, due to its resistance to base rot, which plagues farmers and breweries, Wakashio Shuzo has taken on the challenge of developing products using Konaisin. Based on Mr. To's experience, there was an expectation that authentic shochu made by vacuum distillation of rosé wine yeast would have a fragrant and fruity taste, and he was able to bring out a flowery aroma and sweet taste that had never been seen before.
