Tom Woodgate from the UK and Julia Laki from Hungary did not have a clear plan to launch an olive oil brand, but were attracted to the land, nature, and olive trees of Greece during their lives in the place where they immigrated, and gradually developed into a business.
For both of them, "living with the land" is the center, and they are particular about being involved in labor on site.
Embodying what "real extra virgin olive oil" should be with a high level of awareness of ethics, transparency, and quality is the belief of HONEST TOIL.
"Honest Toil" was originally not aimed at "producing olive oil", but started with the values that Tom and Juli wanted to cherish their relationship with life, nature, and the community in Greece.
They operate this olive grove as a "living project" that connects the land, people, and nature, and chose olive oil production as a way of life that values integrity, harmony, and sustainability rather than commerciality.
What are we doing?
The olive variety grown in the olive orchard is Koroneiki, and there is only one variety.
Harvesting is basically done by hand, without damaging the trees and taking care of the environment of wildlife and plants. The harvested olives are pressed (cold-pressed) at temperatures below 28 degrees Celsius during the day.
Oil extraction and bottling are carried out in collaboration with small local producers and at local joint presses, with an emphasis on production processes that minimize intermediate processes as much as possible.
After pressing, it is bottled as it is, without filtering (= unfiltered) or blending (= single harvest, single variety).
This method achieves a very low acidity level of 0.2~0.3 %, while also maintaining a high polyphenol concentration. (e.g., 537 mg/kg in the 2024 harvest)
