Uses organic JAS barley seeds limited to the Iwami area
The young barley used in our aojiru is born from organic JAS-certified Rokujo barley, which is grown exclusively in the Iwami area of Shimane Prefecture.
This six-row barley is characterized by its sweetness and rich taste, and while many varieties are usually vulnerable to heat, we carefully selected varieties that are particularly resistant to heat. It grows well in the climate of Japan and adds depth to our products as a flavorful ingredient.
Speed and freshness control from harvest to drying
In order to maintain the nutritional value and freshness of the young barley leaves, they are transported to a dedicated drying plant within about two hours after harvesting. In the drying process, the internal temperature of the barley grass is manually controlled so that it does not exceed 40°C, while thoroughly removing foreign matter and checking the quality. It is carefully dried so as not to destroy SOD enzymes and nutritional components.
Through these meticulous measures, we are able to create products that maximize the original power of materials.

Since the 1970s, the tea plantations in Dokai-cho, surrounded by the rich nature of the clear stream and the Miyagawa River, have been working to create soil using homemade ripe compost without using any pesticides or chemical fertilizers. Through this careful cultivation, the original taste and aroma of tea are carefully cultivated.
Tea leaves grown in harmony with nature and organic cultivation techniques cultivated over half a century are packed with abundant nutrients.
In addition, this area, which overlooks the mountains of Oku-Ise, has a large temperature difference between day and night, and due to the influence of the nearby Osugi Valley, it receives more rainfall than other areas, making it a very suitable environment for growing tea. The result is a rich and flavorful tea.
