We are a long-established ginger cracker craftsman who has been in business for more than 100 years. We have lived together with the community for more than a century, centered on the food culture of Usuki City, Oita Prefecture, but due to the Corona disaster, sales have temporarily decreased by about 70% and we are on the verge of bankruptcy.
Meanwhile, "Organic Ginger Powder," which is made by recycling ginger pomace, which was originally discarded up to 2 tons per year because it could not be used for making sweets, won the highest award at the Ministry of Agriculture, Fisheries and Forestry's AWARD, and for the first time, it was evaluated as a processed product only made of ginger, not ginger sweets.
With this as an opportunity, I decided to take on the challenge of becoming a ginger craftsman again from a ginger cracker craftsman, and not only did I start processing but also growing organic ginger in-house, and I launched the organic brand "Ginger Hyakkei" that continues to face organic ginger.

Usuki City in Oita Prefecture is a small town with a population of about 30,000, but in recognition of its abundant food culture and advanced organic agriculture, it has been certified as one of only two "UNESCO Creative Cities for Food Culture" in Japan (49 cities in the world). We grow delicious organic ginger by creating rich soil using ripe compost (dream compost).
In addition, we try to make products that take advantage of the deliciousness and charm of organic materials themselves, without using any additives, and by making delicious organic ginger into carefully processed products, we propose a life with organic ginger that can be easily used in various scenes of daily life.
100 years ago, Usuki City flourished as a major ginger producing area, but now it is in complete decline. We aim to increase the cultivation area of organic ginger, which is rare nationwide, and expand organic farmland through the 100 Views of Ginger, as well as to revive the production area.
Through ginger, we carefully nurture the traditions and food culture of the town, and enjoy delicious smiles that relax the mind and body, and warm scenery in the natural environment.
